{"id":249,"date":"2025-05-29T07:31:35","date_gmt":"2025-05-29T07:31:35","guid":{"rendered":"https:\/\/blog.mere-mortal.net\/?p=249"},"modified":"2025-05-29T09:46:24","modified_gmt":"2025-05-29T09:46:24","slug":"baba-au-rhum","status":"publish","type":"post","link":"https:\/\/blog.mere-mortal.net\/?p=249","title":{"rendered":"Baba au rhum"},"content":{"rendered":"<div class=\"postie-post\">\n<div dir=\"ltr\">P\u00e4te \u00e0 Baba<\/p>\n<div><\/div>\n<div>150g de farine<\/div>\n<div>150g d&#39;oeuf<\/div>\n<div>25g de sucre<\/div>\n<div>10g de levure de boulanger<\/div>\n<div>50g de beurre<\/div>\n<div>3g de sel<\/div>\n<div><\/div>\n<div>Sirop<\/div>\n<div><\/div>\n<div>50cl d&#39;eau<\/div>\n<div>200g de sucre<\/div>\n<div>5 cl de rhum vanill\u00e9<\/div>\n<div><\/div>\n<div>Peser les blancs et ajouter la m\u00eame quantit\u00e9 de farine, m\u00e9langer au crochet et faire reposer 30min.<\/div>\n<div>Pendant ce temps m\u00e9langer le reste de farine, la levure et un petit peu d&#39;eau ti\u00e8de pour faire un levain. Faire reposer 20 min.<\/div>\n<div>Peser le sel et le sucre \u00e0 part.\u00a0<\/div>\n<div>P\u00e9trir \u00e0 la feuille le m\u00e9lange blancs\/farine et ajouter le levain et les jaunes petit \u00e0 petit pendant 10 min. A la fin, ajouter le sucre en trois fois, puis le beurre en cinq fois.<\/div>\n<div>Couvrir et laisser lever 1h dans le four \u00e9teint avec un bol d&#39;eau\u00a0bouillante\u00a0\u00e0 c\u00f4t\u00e9.<\/div>\n<div>Battre \u00e0 nouveau pendant 2 min. Bouler, mouler dans des pots weck et laisser \u00e0 nouveau reposer pendant 30min\u00a0\u00e0 1h dans le four \u00e9teint.<\/div>\n<div>Sortir les babas et pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/div>\n<div>Enfourner 15min environ, adapter en fonction de la taille des moules.<\/div>\n<div>Pendant ce temps, faire le sirop.<\/div>\n<div>A la sortie du four, laisser s\u00e9cher deux heures et puncher g\u00e9n\u00e9reusement : on peut d\u00e9mouler pour puncher ou puncher le baba dans le pot weck pour le servir tel quel.<\/div>\n<div><\/div>\n<div><\/div>\n<div><\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>P\u00e4te \u00e0 Baba 150g de farine 150g d&#39;oeuf 25g de sucre 10g de levure de boulanger 50g de beurre 3g de sel Sirop 50cl d&#39;eau 200g de sucre 5 cl de rhum vanill\u00e9 Peser les blancs et ajouter la m\u00eame quantit\u00e9 de farine, m\u00e9langer au crochet et faire reposer 30min.
